This is the easiest (and tastiest) macaroni cheese recipe I know, and I’ve tried a few over the years! Nigella Lawson is known for her rich, sumptuous recipes and this is no exception.
Before I started this blog I was in a huge rut as far as weekday meals were concerned, I was making this meal most weeks. Part of its appeal was that the ingredients can be put together in a few minutes, another part is that the delicious cheese sauce was as much of a winner with me as with the kids. The recipe is also very easy to remember, which helps because my memory is not what it was in my pre-kids days!
This meal could easily be made with added veg (maybe broccoli or onions and mushrooms) but I’m not sure it’s what Nigella would want π. I tend to serve it with salad or veg on the side. The meal doesn’t really need any meat – the sauce has both cheese and eggs, so packs plenty of protein – though you could add some if you wanted to stretch the meal to serve more people.
I read on a blog post a few weeks ago that certain types of pasta suit different meals. I’d often cooked this with whatever pasta we have in the house but I did use macaroni for this post and I’ll always use it in the future. The pasta kept its bite after being cooked and there seemed to be more sauce (I guess the fusilli that I often use must absorb some of the sauce during cooking). Ingredients
Serves 4 adults
- 250g macaroni
- 250g mature cheddar cheese
- 250ml evaporated milk
- 2 eggs
Method
- Heat your oven to 200Β°C.
- Boil a saucepan of water, then add the macaroni and cook according to the packet instructions.
- While the pasta is boiling beat together the evaporated milk and eggs and grate the cheese.
- Once the pasta is cooked drain it and pour it into a medium-sized roasting dish (mine was 8″ square), then add the egg mixture and the cheese and mix together.
- Place in your oven and cook for 20-25 minutes, until the sauce has set and the top is turning golden.
This sounds decadent and very similar to what is called Macaroni pie as in the use of the egg mixture. Perfect comfort food!

Thank you. I’ve never tried it with normal milk but I think it would still work. It wouldn’t taste as rich, though – evaporated milk is sweeter and more creamy than normal milk. Thanks for stopping by

π it comes in a tin and it’ll be near the tinned custard and rice pudding in the supermarket. When I was a kid we used to have it with apple pie after a roast dinner on a Sunday π
